A quick glamour cake, perfect for every party! It all started with After Eight addiction of my boyfriend…
85 g. Salted butter + extra for greasing
50 g. Dark chocolate broken into pieces
120 g. Plain flour
140 g. Golden caster sugar
1/2 tbsp. Bicarbonate of soda
1 Large egg
140 ml. buttermilk
100 ml. boiling water
For the icing
150gr. After Eights broken
50 ml. double cream
Heat the oven to 180C/160C fan/gas 4.
Grease and line the base and sides of a 22 cm square tin.
Melt 85 grams of butter and 50 grams of dark chocolate together in a small pan. Mix 120 grams of flour, 140 grams of sugar, 3 tbsp of cacao and 1/2 a tsp bicarbonate in a bowl
Wisk together the egg with the buttermilk in a separate bowl. Scrape the melted chocolate mixture and egg mixture into the dry ingredients along with 100 ml boiling water.
Wizz briefly with an electric wisk until lump-free. Scrape into the tin and bake for 25 to 30 minutes.
Cool the cake in the tin for 30 minutes and put the cake on a plate afterwards.
To make the icing, melt the After Eights and cream together in a saucepan. Then chill until it‘s thicker and spreadable.
Halve the cakeUse half of the icing to sandwich the layer together, then spread the rest over the top.
Then leave it in the in the refrigerator for a few hours. Finally we decorated the cake with candy canes; whick looked very festive and sweet.
